Double Chocolate Banana Muffins

Those dark mornings of January lacking the sparkle of Christmas lights feel like they go on forever. We’re supposed to be moving back towards the sun, towards longer days and earlier sunrises, but the darkness feels like it’s here to stay. Those are the mornings that I light a candle and bake chocolate muffins, because chocolate for breakfast (or an afternoon snack) can give us that little hug that keeps us going until a sunny day can recharge our souls. Food can truly be medicine, yes for the body, but also for the soul.


Ingredients:

2 bananas, very ripe

1/3 cup plain greek yogurt

1 egg

1/4 cup butter, melted

2 teaspoons vanilla

3/4 cup coconut sugar

1/4 cup cocoa powder

1/2 teaspoon salt

1 teaspoon baking soda

1 1/2 cup flour

1/2 cup chocolate chips


Directions:

Preheat the oven to 350 degrees. Line a muffin tin with muffin liners or butter them so the muffins don’t stick. In a large bowl, mash the bananas until very soft and liquid. Add cocoa powder and mix well until deep chocolatey paste forms. Add the yogurt and egg and whisk until combined. Add the melted butter and coconut sugar and mix again. Sift in the salt, baking soda, and flour and mix until combined. Fold in the chocolate chips. Scoop about 3 tablespoons of batter into the muffin cups, they should be about 3/4 of the way full. Bake for about 18 minutes or until a toothpick inserted in the center of the muffin comes out clean. Let cool and enjoy!
