Spicy (or not) Salmon Bowl

Sushi nights were on regular rotation for date night before we had our lovely children. For one reason or another (babysitters? early bedtimes? picky eaters? how much was that bill???) we’ve chosen other cuisine for our family outings. I can live without the raw fish, but oh how I miss the combination of flavors and textures in our favorite rolls. This little protein packed creation is my flexible solution to our sushi cravings. We let the kids customize their bowls and combine their own favorite flavors together. Obviously the spicy sauce is optional unless you’re making my bowl, then I’ll take double.


Ingredients:

Salmon:

4 salmon filets, skin removed and cubed

2 tablespoons olive oil

1 tablespoon coconut aminos

1 teaspoon coconut sugar

1 teaspoon garlic powder

1/2 teaspoon ginger powder

Spicy “Mayo”:

1/3 cup greek yogurt or mayo or a mixture of both

1 tablespoon sriracha

juice from 1/2 a lime

for garnish:

green onions

cucumber slices

avocado slices

sesame seeds or gomasio


Directions:

Turn your oven to high broil and line a baking skeet with parchment. In a bowl combine the cubed salmon with the olive oil, coconut aminos, coconut sugar, garlic powder, and ginger powder. Tip it onto the baking sheet and pop in the oven for about 8 minutes depending on the strength of your broiler. Stick close by and keep an eye on it because it will go from perfect to burnt very quickly under the broiler! While that is cooking, mix together the sauce. If you are serving with the coconut rice you’ll want to get that going before putting the salmon in the oven! Once the salmon is done build your bowl and top with your garnishes. Enjoy!
