Vitamin C Gummies

Snacks are a daily necessity (and maybe a bit of a struggle) in our home. If you have kids, you’ve heard “moooom, can I have a snack???” more times in a day than you’d like. If you try to avoid packaged snacks like we do (another struggle!) it can be a question that you’re always looking for a simple answer to. Likewise, this time of year brings the sniffles and sore throats... another ever present occurrence in a mother’s world. Vitamin C is an immune modulator which is a fancy way of saying it makes it stronger and more efficient! It also depletes quickly in times of stress (physical or mental stress) which means we need to consume A LOT to keep up with our needs. Papaya is incredibly high in vitamin C and with the added gelatin these little gummies are chock o’block full of goodness in one delicious snack! All your problems have been solved ;)


Ingredients:

4 cups papaya juice blend (the one I buy is just organic papaya puree and apple juice)

1/2 cup gelatin

1/4 cup honey

1 tablespoon acerola powder (optional!)


Directions:

Pour the papaya juice in a wide shallow pan. Gently sprinkle the gelatin over top trying to make an even coating so it can soak up without clumping.

Let it sit in the cold pan until the gelatin blooms (which means it has absorbed liquid and no longer looks like a powder).

While it blooms, take an 8x8 glass baking dish and coat it with coconut oil.

Once the gelatin is bloomed, turn the heat on low under the pan and let the mixture warm. It will start to turn to a liquid. Bring it to a simmer and whisk gently until no clumps of gelatin remain. Turn the heat off and whisk in the honey and acerola powder if using. Pour the mixture into the dish. Move the dish carefully to the fridge. Let it set for about 5 hours and cut into cubes. Enjoy!
