Sweet & Savory Salmon Bowls

Salmon is such a lovely way to add seafood into your family’s meal repertoire. It has a mild flavor, it takes on whatever seasoning you add to it, and it’s pink which honestly, is just fun. These salmon bowls are always a hit because it has a make your own vibe to it that our kids go wild for. The sweet and savory sauce is the perfect balance of tastes to keep you coming back for another bite. The garlic and ginger are a bonus in any recipe this time of year since they are both chock full of anti-viral and immune boosting properties. It helps that they taste great too!


Ingredients:

salmon:

4 salmon filets

1/3 cup coconut aminos

1/4 cup honey

1 teaspoon grated ginger or 1/4 teaspoon ginger powder

2 cloves of garlic, finely grated or 1/4 teaspoon garlic powder

pinch of red pepper flakes if you like a hint of spice

broccoli:

2 cups broccoli florets cut into bite sized pieces

1 tablespoon olive oil

salt and pepper to taste

for topping:

thinly sliced green onions

sesame seeds


Directions:

In a large bowl, mix the salmon ingredients together and add the salmon filets. Make sure to get the flesh part of the fish in the marinade. Set that aside and preheat the oven to 425 degrees F. Place the broccoli on a parchment lined sheet tray and toss with the oil, salt, and pepper. Pop it in the oven for about 25 minutes. When the timer goes off, take the salmon out of the marinade (keep the extra!) and place it on another parchment lined sheet tray. Put it in the oven for about 10-15 minutes until it just starts to flake apart when prodded with a fork. Keep your eye on the broccoli and take it out before it gets too crispy! At this point, you’ll need to take the broccoli out of the oven and turn the broiler on low. Pour the rest of the marinade over the fish and put it under the broiler for just a couple minutes. Keep a close eye on it, don’t leave the kitchen! It can burn very quickly. You want it to get beautifully bubbly and take it out right before it blackens. Serve over bone broth rice with sliced scallions and sesame seeds!
