Apple Cinnamon Gummies
Gelatin is truly a superfood. It is incredibly high in glycine which is an amino acid that lowers inflammation in the body (which eating muscle meats without glycine can higher). It also helps to strengthen the intestinal barrier that can be compromised by toxins in our food and environment. Even without the benefits of gelatin, these gummies are so delicious and moreish that you’d want to eat them anyways. The apple juice and cinnamon play together so nicely and the texture is perfect for eating out of hand. We love them as a handy snack and always keep our fridge stocked!
Ingredients:
4 cups apple juice
(look for the good stuff with just organic apple juice in the ingredients that isn’t from concentrate!)
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/4 cup maple syrup
1/2 cup gelatin (Perfect Supplements is BY FAR my favorite gelatin and you can get a discount with code JMW10)
Directions:
In a wide shallow pan, mix the apple juice with the vanilla, cinnamon, and maple syrup. Gently sprinkle the gelatin over top trying to make an even coating so it can soak up without clumping.
Let it sit in the cold pan until the gelatin blooms (which means it has absorbed liquid and no longer looks like a powder, but resembles a brain!). About 10 minutes or so.
While it blooms, take an 8x8 glass baking dish and coat it with coconut oil.
Once the gelatin is bloomed, turn the heat on low under the pan and let the mixture warm. It will start to turn to a liquid. Bring it to a simmer and whisk gently until no clumps of gelatin remain. Pour into the oiled baking dish. Move the dish carefully to the fridge. Let it set for about 2-3 hours until it hardens and cut into cubes. Enjoy!
