Sauteed Zucchini
I will never tire of zucchini. Even in these early fall days when the gardens are (if you can believe it) STILL producing piles of the green wonders, I love cubing up a nice petite zucchini and sautéing it in butter with a bit of salt until the edges are just golden and the center still has a firmness to it. I love it. You can’t change my mind, but I bet I‘ll be able to change some of yours with this simple recipe that is so much more than the sum of its parts.
Ingredients:
2 small zucchini, diced into small cubes
1 tablespoon butter
1/2 teaspoon salt
pepper to taste
Directions:
Heat a skillet over medium heat. Add the butter and let it melt. Add the zucchini and let it brown, stirring it every so often. Wait to add the salt and pepper until right before serving and taste to adjust it to your liking. Voila!
