Yogurt Waffles

Everyone needs a super simple, make with your sleepy eyes closed waffle recipe. This recipe is endlessly adaptable. You can add in blueberries or chocolate chips. You can make pancakes instead of waffles. You can triple the recipe and freeze them for homemade frozen waffles on those mornings. It’s easy enough, you can make it on a Tuesday, but we all know Saturdays are made for waffles.


Ingredients:

Makes 8 waffles

1 1/2 cups flour (I used all purpose Einkorn)

1/2 teaspoon baking soda

1/2 teaspoon baking powder

a pinch of salt

1/4 cup coconut sugar

2 eggs

1 teaspoon vanilla extract

1 cup greek yogurt

3/4 cup milk

2 tablespoons melted butter


Directions:

Preheat your waffle iron. In a large bowl, mix the eggs with the sugar and vanilla extract. Add the yogurt and milk and whisk again. Whisk the butter in. Sift the flour, baking soda, baking powder, and salt into the bowl and fold through. It should look like a slightly thick batter. Pour about 1/2 cup of batter onto the waffle maker and close. Cook for about 3 minutes, until fragrant and golden. Serve with a dollop of yogurt and the berry syrup. Enjoy!
