Everything (but the) Bagel Salmon with Lemon Garlic Aioli

We have a little bakery in our town that makes the best everything bagel I’ve ever had in my whole life. Going more than a week without one feels a bit like deprivation. I bought a jar of everything bagel seasoning to sprinkle on all the things to try to satisfy my craving. I’ve learned that you just can’t replicate the satisfaction of biting into a chewy bagel slathered with cream cheese. That lonely little jar of seasoning caught my eye and I wondered if it could give our frozen salmon filets a little pizzaz for dinner. I mixed up an aioli to give that creamy, tangy counterpart that I love in cream cheese and boom, dinner was a hit!


Ingredients:

Makes 8 servings

Salmon:

8 filets of salmon

1/3 cup dijon mustard

2 tablespoons everything bagel seasoning

Lemon Garlic Aioli:

1 garlic clove, finely grated

juice from 1 lemon

2 tablespoons mayo

2 tablespoons greek yogurt

pinch of salt


Directions:

Preheat your oven to 400 degrees. Line a baking sheet with parchment paper. Pat the salmon filets dry as you place them on the pan. Smear the mustard over top and sprinkle the bagel seasoning over top evenly. If you’re also making the smashed potatoes, wait to put the salmon in until the potatoes have about 20 minutes left. While they cook, combine the aioli ingredients in a small bowl ready for drizzling and dipping!
