No Bake Cookies
No bake cookies are one of those classic childhood treats that I’ve hankered to recreate for my own children. It’s also one of those recipes that needed a bit of remodeling to match how we eat as a family! We swapped the sugar (or corn syrup!) for maple syrup, the heavily processed cocoa powder for mineral rich cacao powder. I added coconut oil for energy sustaining fats and sprouted rolled oats for easier digestion. Of course, you can use whatever you have on hand! I promise they will not disappoint. I usually make a double batch and stash half in the freezer for dessert emergencies. They happen more than you think!
Ingredients:
1/2 cup maple syrup
1/4 cup cacao powder
1/4 cup milk
1/4 cup coconut oil
1/4 cup peanut butter
2 cups sprouted rolled oats
1/3 cup shredded unsweetened coconut
1/2 teaspoon vanilla extract
pinch of salt
Directions:
In a large saucepan mix the maple syrup and cacao powder and stir. Then add the milk and coconut oil. Keep stirring every so often until it comes to a boil. Let it boil for a minute or so and remove from the heat. Stir in the peanut butter, vanilla, salt, oats, and coconut. Use a spoon or scoop to make little balls of the dough. Pop them in the fridge (or freezer) until they are hardened enough to hold and eat! They will eventually get a bit soft at room temperature because of the coconut oil, so plan accordingly ;) Great for handing right out of the fridge but maybe not a great lunchbox snack unless you have an ice pack with them!
