A Hearty Breakfast Burrito
I’m always on a quest for breakfasts that fill me up enough to fuel my wonderfully full mornings. Satiety of meals often comes down to balance. We need a hearty dose of protein first thing in the morning, but we also need the sustaining energy of complex carbohydrates, and a bit of long lasting fat to keep us full. This breakfast hits all the notes for me. It’s warming, savory, and balanced enough to keep me full long past morning snack time which means I can keep chugging until the stove calls me back at lunchtime.
Ingredients:
2 yellow or russet potatoes, diced
1 bell pepper, diced
1 pound breakfast sausage of your choice (I use a ground breakfast sausage pulled into little bite sized chunks)
salt and pepper to taste
1 tablespoon olive oil
12 eggs, scrambled
8 burrito sized tortillas (I use Siete brand for gluten free or Maria Ricardo organic flour tortillas)
1 cup grated raw cheddar cheese
toppings like salsa, sour cream or greek yogurt, hot sauce, cilantro, etc. for serving
Directions:
Heat oven to 400 degrees. Line a large baking sheet with parchment paper. Arrange your potatoes, peppers, and sausage in separate sections of the pan in case some cook faster than others. Drizzle the veggies with a bit of olive oil and season with salt and pepper.
Roast for about 30 minutes, checking around 20 minutes to see if anything need to be removed before burning. While those are cooking go ahead and scramble up the eggs and grate the cheese as well as preparing any other toppings you’ll need. If you’ll be making these ahead you’ll need to wrap them for storage. I like to place a large square of foil on my counter with another square of parchment on top. This keeps them nice and warm. Place the tortilla on the parchment. Scoop about 1/8 of the potatoes, peppers, and sausage and place it into the center. Add a bit of cheese, 1/8 of the eggs, plus whatever other toppings you’d like. Fold one side over the pile of toppings, then fold in each end before finishing by rolling it over tight. Wrap the foil-parchment square around and you’re done! When you’re ready to eat you can pop them in a 375 degree oven from the fridge for about 2o minutes! Freezer about 40.
