Tuna Pickle Salad
Picnic season is officially upon us. I don’t know about you, but picnics in this season of life rarely look like the a checkered blanket with real plates and a variety of beautiful sides. I’ll leave those to Pinterest. Ours are usually on whatever blanket I find in our trunk, all eating off of paper plates and shooing the ants off the sandwiches that get set down for an impromptu game of tag. There is usually juice boxes and homemade cookies and I wouldn’t want it any other way. This tuna salad is 100% my go-to when we need to pack a lunch for a family adventure whether its a hike with friends or a day at the beach, it never fails to satisfy and delight everyone in the family. I like mine scooped up with tortilla chips and the kids have become enamored with organic pretzel chips as their vehicle of choice. If I’m really on it, I’ll double the amount and have enough to make tuna melts the next day at home because two days out in a row is also not realistic in this season of life.
Ingredients:
Makes 1 serving.
1 can of tuna, drained
(this is the brand I've been buy in bulk at Costco!)
1 teaspoon good mayo
1 teaspoon greek yogurt
t teaspoon grainy mustard
(we are never without this in our fridge)
salt and pepper to taste
as many finely chopped bread & butter pickles as you want!
(but if you prefer dill pickles, go for it ;)
If you want to make Tuna Melts (and why wouldn’t you?):
2 slices of bread, sourdough is beautiful here
your favorite cheese, I like a mild raw cheddar
a bit of butter
Directions:
In a large bowl, mix all of the ingredients together. Go light on the salt and pepper until the end. Give it a taste and adjust as you see fit. Sometimes it needs a bit more kick from the mustard, a bit more pickles, a bit more salt, or some more yogurt for creaminess. Everyone has different tuna salad standards :) This stores so well in the fridge for a couple of days so it makes a great make ahead lunch.
If you want to repurpose it for dinner or a hot lunch you can make Tuna Pickle Melts!
Heat a wide skillet over medium heat and grab two pieces of bread (sourdough is excellent here). Spread each peice with butter on one side. Put one slice on the skillet buttered side down and lay some cheese on top. Plop the tuna salad on top and smoosh it flat. Add a bit more cheese on top and the other piece of bread, buttered side up. Toast on one side, then flip and toast the other. Enjoy the easiest and tastiest) warm sandwich ever!
