Peaches & Cream Yogurt Bars
There are these ($$$) ice cream bars coated in chocolate that we buy on vacation and enjoy wholeheartedly. The problem with buying them at home is that one box won’t even cover dessert for our whole family for one night and costs more than all of the ingredients for this recipe. Instead, when we’re home, I take the time to whip these up (which only takes 15 minutes of hands on time) and we eat like kings of our castle! My only popsicle rule? THEY MUST BE EATEN OUTSIDE. This isn’t a vacation house with a cleaning lady, HA! You can mix the fruit up in these, strawberry is a close second favorite of ours, but peaches and cream is a classic. Also, the chocolate drizzle adds a bit of extra magic, but it’s totally optional!
Ingredients:
1 cup frozen peaches
1 cup greek yogurt
1 cup heavy whipping cream
1 cup of milk
½ cup sugar
1 teaspoon vanilla extract
Optional chocolate drizzle:
½ cup chocolate chips, melted
Directions:
Get your popsicle molds laid out and ready for filling. Also, make sure you have a good spot in your freezer before you get started! I usually have to do a bit of rearranging to make it fit ;) Put all of the ingredients in a blender and blend until smooth. Pour into the popsicle mold and pop into the freezer. If you have leftover mixture you can either drink it like a creamy milkshake or pop it in the fridge to freeze in the next batch!
Let them harden for at least 4 hours, the bigger the mold, the longer it takes to freeze solid. If you want to do a chocolate drizzle, melt the chocolate and set it aside before you get the popsicles out of the freezer. Lay them flat and use a spoon to quickly drizzle little lines all over the bag. It will harden instantly! Pop the bars in a bag or glass container and store in the freezer until popsicles on the porch time rolls around!
