Blueberry Cobbler Cake
I like to use these little notes at the top of the recipe to explain just exactly why you should use your stretched thin time to make each recipe. Good food is always welcome in a family home with plently of willing and eager tasters. The problem is that homemade treats have become passé, a waste of time either because you can just buy something at the store orbecause you shouldn’t be eating them anyways. When I start to question why, why do I find myself drawn to the kitchen to stir up a batch of cookie dough, whip up a tray of muffins, melt butter for a snacking cake it doesn’t take long for me to come up with an answer. Baking for somebody else, even more so than cooking a meal, feels like sure a pure act of love. It’s a bit frivolous, totally unnecessary, and even more meaningful because of its impracticality. Smelling a cinnamon-y, blueberry-y cake baking when you walk in the kitchen is like a hug saying, “I made this just for you just because” and man, that feels good.
Ingredients:
Makes one 9×13 cake
Cake Batter:
¼ cup milk
¼ cup butter
¾ cup sugar
½ cup greek yogurt
1 egg
1 teaspoon vanilla
2 cups flour
2 ½ teaspoons baking powder
½ teaspoon cinnamon
2 cups blueberries
Cobbler Topping
¾ cup butter
1 cup brown sugar
⅔ cup flour
pinch of salt
1 teaspoon cinnamon
Directions:
Preheat your oven to 350 degrees. Butter your baking pan and set it aside. In a large bowl whisk together the milk, melted butter, sugar, greek yogurt, vanilla and egg until nice and combined. Tumble the flour, baking powder, and cinnamon into the bowl and genly mix together until just combined. Toss the blueberries in and give it one or two more gentle stirs to add them to the mix. Scrape the batter into the baking pan and spread until even. It will be verrrrrry thick!
In a small bowl, combine all of the cobbler ingredients with a fork. Use the edge of the fork to “cut” the butter into the flour, sugar, and salt until it’s crumbly looking. Sprinkle the mixture evenly over the top of the batter and pop it in the oven for about 35-40 minutes.
