Cilantro Lime Crema
It’s no secret, I love sauces. I think it’s the one thing we could all do better in our home kitchens to bring home cooking to the level of restaurant food. My goal for sauces? To bring a pop of brightness and freshness to whatever it’s served with. Slow cooked meats, sheet pan dinners, and even grilled meats sing when they’re paired with a creamy, tangy drizzle of sauce. They go from one note savory to WHOA, that’s good. This guy is a rendition on a sauce I’ve enjoyed from Chipotle. Theirs, of course, is made with sour cream and canola oil (not terrible, just not my choice for ingredients in our kitchen!) so I’ve traded up for thick and creamy greek yogurt, skipped the added oils, and doubled up on the cilantro and lime. To say it’s spoon licking good is an understatement.
Ingredients:
1 cup plain greek yogurt ( I use full fat here for extra creaminess!)
juice of 2 limes
a handful of cilantro leaves (a bit of stem is perfectly fine!)
a pinch of salt
Directions:
Put all of the ingredients in a blender (or a mason jar if you have an immersion blender.) Blend away until just tiny green specks remain of the cilantro leaves. Taste for salt and lime and adjust to your tastes. Store in an airtight container in the fridge for up to a week and have fun adding it to EVERYTHING ;)
