Green Apple Coleslaw
I’m not ashamed to say that KFC coleslaw is my ideal coleslaw. My grandfather always, always had a container in his fridge. Even when he was making homemade salmon for dinner, he would serve it with a scoop of the good stuff. It was finely shredded, no big chunks of cabbage and definitely doused in white sugar to sweeten the deal. I’ve tried more times than I care to admit to recreate the coleslaw with my “healthy” ingredients and just couldn’t get it right. I didn’t want to add a scoop of white sugar to my veggies, but the honey just wasn’t quite right. I decided to add shredded carrots and apples to add some natural sweetness and there it was! Admittedly, I haven’t tasted KFC slaw in years, but this tastes pretty darn close to my memories and that’s good enough for me.
Ingredients:
Makes 6-8 servings
2 tablespoons high quality mayonnaise
1 tablespoon apple cider vinegar
2 tablespoons greek yogurt
1 tablespoon raw honey
½ teaspoon salt
black pepper to taste
½ head green cabbage, grated
2 green apples, grated
2 carrots, grated
Directions:
Mix the mayo, vinegar, greek yogurt, honey, salt, and pepper together in a large bowl. Then add the cabbage, apples, and carrots and toss to coat. Enjoy!
