Honey BBQ Ribs

Do ribs have a season? The long slow cooking method brings a fall/winter vibe, but the sweet and tangy flavors sing of spring and summer. The last minute char from the grill puts me in mind of warm, sunny evenings waking barefoot to the picnic table to enjoy an al fresco dinner as a family. I think maybe, I just answered my own question. It’s worth having the oven on for a few hours to get these tender, fall apart rustic and sweet ribs on the table. Don’t be put off by the long cook time, your hands will work for less than 15 minutes when it’s all said and done. Let the oven do the work for you and put your feet up outside to enjoy the May sunshine.


Ingredients:

Makes 8 servings

3 pounds pork ribs

1/2 teaspoon salt

fresh pepper

Honey BBQ Sauce:

2/3 cup ketchup

1/3 cup apple cider vinegar

1/4 cup honey

2 teaspoons smoked paprika

1 teaspoon cumin

1 teaspoon salt

fresh pepper to taste


Directions:

Preheat the oven to 400 degrees F. Put the ribs in a large dutch oven and sprinkle with salt and pepper. Add about 4 cups of water and cover with the lid. Pop in the oven for about an hour and a half. While the ribs are cooking, mix the sauce ingredients together in a small bowl and set aside. When the ribs are tender (you can test them by prodding with a fork), remove them from the dutch oven and baste with half of the sauce. If you have a grill, preheat it to medium heat. Grill the ribs, uncovered for about 10 minutes. Continue to baste with the sauce as they grill. If you don’t have a grill, you can broil the ribs in your oven. Take them out halfway through and baste with the rest of the sauce. Keep a close eye on them to ensure they don’t burn! Enjoy!
