Curried Apple Turkey Burgers

It must be said, turkey burgers are usually kind of a disappointment. You expect a juicy, savory mouthful when you bite into a burger, but turkey burgers are usually simultaneously watery and dry while lacking in any flavor. Banish that thought before you dig into these lovely little morsels. They are so juicy, so flavorful, and quite frankly better than the best beef burger I’ve ever had. The apple brings moisture, the curry powder and coconut aminos a background of subtle flavor, and the garlic and herbs a hit of freshness that brings it all to life. I love making a big batch of these and eating them all week long for a protein packed lunch. I hope you do the same.


Ingredients:

Makes 8 servings

2 pounds ground turkey

1 honeycrisp apple, grated

1 teaspoon salt

1 tablespoon curry powder

(I use Balti curry powder, but you can use what you have!)

1 tablespoon coconut aminos

2 garlic cloves, finely grated

1 scallion, finely chopped

1 handful of cilantro, finely chopped

1 tablespoon coconut oil for cooking

For serving:

buns, if desired

sprouts or lettuce


Directions:

In a large bowl combine all ingredients except the ground turkey and use a fork to mix well. After mixed add the ground turkey and use your hands to thoroughly mix together. Let the mixture sit for about 20 minutes to come together. The mixture will seem very wet for a burger mix, that’s normal! It will work, I promise! Heat a wide skillet over medium heat and add the coconut oil. Scoop about 1/2 cup of the turkey (typical burger size) mixture and using slightly damp hands form a ball and press it into the pan, flattening it out into a patty shape about 4 inches across. Repeat until the pan is full, with room to flip. I can usually cook 3-4 at a time. Cook for about 6 minutes on the first side and flip. Try not to move them until they form a crust or they will stick! Cook on the other side for about 4-5 minutes and cook another round. Repeat until they are all cooked. These are so juicy and flavorful that they make perfect leftovers. Just reheat them in a low oven for about 10 minutes before eating!
