Carrot & Snap Pea Salad
The perfect slightly sweet, crisp and fresh counterpart to grilled meat. Raw carrots are also incredibly beneficial in “sweeping” our digestive system and carrying out any unwanted ruffians that could be causing problems. I eat a raw carrot every single day for this reason, but this salad brings it to a whole new delicious level!
Ingredients:
Makes 8 servings
4 carrots, peeled
2 cups of snap peas
1 teaspoon rice wine vinegar
1 clove of garlic, finely grated
1 tablespoon coconut aminos
Directions:
Use your peeler to peel long strips of the carrot until only the core remains...take the cores as a chef’s snack! Cut the ends off the snap peas, and slice them on the diagonal into thin strips. Put them in a bowl and toss with the other ingredients. Taste for seasoning and adjust to your tastes.
