Cinnamon Sugar Apple Puffs

The smell of apples baking with cinnamon and nutmeg is by far and away the very coziest smell in the world. These little muffin puffs are like the best autumnal candle, plus you get a treat at the end of it! They come together so quickly, bake in 15 minutes, and have that crunchy sugary top that just brings me so much joy. I love having a batch of muffins on the counter to add to our breakfast plates, place in outstretched little hands asking for a snack, or to pack up to take on a playdate at the last minute. I hope you enjoy them and take time to sit and savor them with your family!


Ingredients:

⅓ cup butter, melted

½ cup sugar

1 egg

1 teaspoon vanilla

½ cup milk

1 ½ cups flour

1 ½ teaspoons baking powder

½ teaspoon salt

¼ teaspoon nutmeg

1 apple, grated on a a box grater

for topping:

¼ cup sugar

1 teaspoon cinnamon


Directions:

Preheat your oven to 350 degrees and prepare your muffin tin for baking. I love these in mini-muffin form and use these liners for the easiest possible baking experience. You could make full size muffins, or even pour the batter into a 9x13 baking dish for a cake! In a large bowl, mix the melted butter, sugar, vanilla, milk and egg. Add the flour, baking powder, salt, and nutmeg and fold together with a wooden spoon. Add the grated apple and fold through. Set aside the batter. In a small bowl mix the sugar and cinnamon together for topping the puffs before baking. Put the batter in your muffin tin and sprinkle generously with the cinnamon sugar mixture. For mini muffins bake for about 15 minutes, for regular muffins bake for about 20 minutes, for a cake bake for about 30-35 minutes. Each will be done when a toothpick inserted in the middle comes out clean. Let them cool for 10 minutes or so before eating. You can store the leftovers at room temperature or the fridge for up to 3 days.
