Kitchen Sink Cookies
In my book, it’s never a bad idea to make a batch of cookies. The one thing that stops me is soft butter. I don't know about you, but I never have the perfect ½ cup of butter softened and waiting to be used in my favorite cookie recipe. Enter the kitchen sink cookie. It will take your butter melted and poured in the bowl thank you very much and whatever mix-ins you throw its way and taste delicious every time. Of course, it will also never turn out quite the same twice, but I have to admit, I kind of love that about this recipe. Our favorite mix-ins are leftover chocolate bars and Unreal chocolate candies with a sprinkle of sea salt on top. In ten minutes you could have cookie dough chilling in the fridge waiting to be baked fresh whenever the craving strikes...doesn’t that sound like just the best thing ever?
Ingredients:
½ cup butter, melted
3/4 cup coconut sugar
¼ cup sugar
1 teaspoon vanilla
1 egg
¼ teaspoon salt
1 ¾ cup flour
½ teaspoon baking soda
up to 1 cup mix-ins
Directions:
Melt the butter and set it aside to cool for a few minutes. In a large bowl, mix the coconut sugar and regular sugar with the egg and vanilla. Pour the melted butter over top and whisk well. Add the flour, baking soda, and mix-ins and fold together. If you’re adding any chocolate make sure your dough isn’t too hot from the melted butter first or it will melt! It will seem very wet for cookie dough. That’s totally normal! Keep stirring until it’s totally uniform and pop in the fridge for at least 2 hours. You can leave it in the fridge, covered, for up to five days and just scoop and bake what you need for fresh cookies each time! When you’re ready to bake, preheat the oven to 350 degrees and line a baking sheet with parchment paper. Scoop balls of dough about 1 heaping tablespoon. Place them on the baking sheet with room for a bit of spreading. Bake for 16 minutes and “bang” the pan down when you take them out of the oven for the crispiest edges and chewiest centers. Let them cool for a few minutes and DEVOUR! Enjoy ;)
