Garlic Butter Green Beans

Give me a vegetable and I’ll probably cook it in a pan with some butter and garlic. It’s just my fool proof method for making any vegetable delicious. The small amount of water steams the green beans and when the lid is removed the water evaporates allowing the garlic and beans to pan fry in the melted butter. The garlic and salt livens it all up and it’s just one of those dishes that is so simple but so, so good. Try it with any vegetable you don’t know how to cook! Just be careful not to over steam the veggies...we don’t want soggy veg, just barely cooked (al dente) with a bit of browning from the butter!


Ingredients:

Makes 8 servings

1 pound of green beans, ends trimmed if needed

2 tablespoons butter

¼ a large pinch of salt

4 cloves of garlic, thinly sliced

½ cup water


Directions:

Put the green beans in a wide skillet and pour the water in. Dot the butter over top, scatter the garlic over top, and sprinkle with the salt. Put a lid on and heat over medium heat. You should see a bit of steam escaping out of the sides. At this point, remove the lid and poke a green been. It should still be firm, but soft enough to bite through. Remove the lid and let the water evaporate for a bit, still cooking over medium heat. Once the water is gone, you’ll need to move the green beans around a bit so they don’t burn. It will only take a few minutes of sautéing in the butter to get some nice color. Serve immediately for the yummiest results!
