Lemony Orzo

A lemony, cheesy orzo that begs to be scooped up and devoured. If your kids don’t love lemony flavors, save that for last and squeeze it over just the portions for the lemon lovers in the house. I’ve never met a kid (or adult) who turned their nose up at buttery-parmesan-y pasta and the meatballs are the perfect little side kick.


Ingredients:

Makes 4 servings

4 servings of orzo Pasta (cook amount needed fresh)

juice of 2 lemons

a drizzle of olive oil OR a pat of butter

¼ cup of fresh grated parmesan

salt and pepper to taste


Directions:

Cook orzo according the package directions. Drain it and add the lemon juice, olive oil or butter, fresh parmesan, and salt and pepper. Give it a taste and adjust the seasoning as needed. Plate up with parmesan shavings over top and enjoy your plate of goodness!
