Oatmeal Chocolate Chip Ice Cream Sandwiches
When you can have homemade ice cream sandwiches on an ordinary Tuesday after dinner, why would you not? I’m all about maximizing the whimsy and joy of every ordinary day I get to spend with my family and ice cream sandwiches definitely do the job. You can certainly buy vanilla ice cream from the store and use that in between the cookies, just make sure it’s quite soft before trying to make the sandwiches. If you just have a hankering for vanilla ice cream or oatmeal chocolate cookies by themselves go for it! It’s a three for one recipe here. Whatever you do, don’t forget that every day is for celebrating and enjoying!
Ingredients:
Makes 8 servings
Oatmeal Chocolate Chip Cookies:
¼ cup butter, melted
¼ cup coconut sugar (or brown sugar)
1 egg
1 teaspoon vanilla
¼ teaspoon salt
½ teaspoon baking soda
½ cup oats
½ cup flour
½ cup chocolate chips
Vanilla Ice Cream:
1 cup sugar
3 cups whole milk
1 ½ cups cream
2 scoops collagen
½ teaspoon vanilla
1 egg yolk
Directions:
First, you’ll need to make the cookies so they can cool before assembling the sandwiches. Preheat your oven to 350 degrees and line a baking sheet with parchment paper. In a bowl combine the melted butter and coconut sugar and whisk well. Add the egg, vanilla, and salt and whisk again. Add the baking soda, oats, and flour and use a wooden spoon to bring it together. Then fold the chocolate chips in. Use a tablespoon to scoop the cookie balls and roll them into a golf ball size. The dough might be quite loose from the warm butter, but just do your best to get even dollops on the baking tray. Leave about 3 inches between each cookie, since they will spread as they bake. Bake for about 12 minutes and let them cool on the baking sheet after you take them out of the oven. Repeat until all the dough is used.
If you’re making your own ice cream, combine all of the ice cream ingredients in a blender and pour into an ice cream maker. Churn for about 30 minutes or so, until it’s a soft serve consistency. Use a spoon to place it on the bottom of one cookie and smoosh another on top. You won’t use all the ice cream, so scoop the rest in an air tight container and store in the freezer. Enjoy your ice cream sandwich party! You can store these in the freezer until they’re all gone.
