Braised Black Beans
We don’t rely on beans as a source of protein, since they are relatively low in bioavailable protein but we love them as a lovely dose of fiber with our meals. If you find that you have digestive distress (beans, beans, the magical fruit... you know) then you should try soaked beans! My favorite brand for canned beans is Eden Organics. They soak the beans overnight to reduce the sugars that cause excess gas and then cook it with kombu which is a mineral rich seaweed. Yay! A scoop of these black beans pairs so well with shredded meat and can double as a side to some scrambled eggs with salsa the next morning!
Ingredients:
1 tablespoon butter
1/2 red onion, finely diced
2 cloves garlic, finely diced
1/2 teaspoon salt
pinch of dried oregano
pinch of ground cumin
1/2 cup bone broth
1 can black beans (i love eden organics brand!)
1 teaspoon red wine vinegar
small handful cilantro leaves, finely chopped
Directions:
In a small sauce pan, melt the butter over medium low heat. Add the onion and garlic and let it soften in the heat. Add the salt, oregano, and cumin and continue to let it brown slightly. Add the beans and broth and put the lid on. Let it simmer for 15 minutes. Add the red wine vinegar and cilanto and stir through. Taste for salt and add more if needed. The beans are ready for eating!
