Cherry Cheesecake Popsicles

We tend to rely heavily on smoothies as afternoon snacks in the summertime. I realized that I could save myself a whole lot of time if I turned our protein rich smoothies into a popsicle so I could make it once and hand them out for days to my hungry (and hot) offspring. Turns out it was a solid plan, although they taste so good they usually eat 2 or 3 at a time which means I’m back to my daily task of making smoothies just in popsicle form. This version is seriously as close as you can get to a cherry cheese cake in smoothie/popsicle form which is to say, you should make it ASAP.


Ingredients:

2 cups frozen cherries

1 1/2 cups greek yogurt

1 cup whole milk

1/4 cup collagen

1/4 cup maple syrup


Directions:

Blend all of the ingredients together in a high speed blender. Pour the mixture slowly into a popsicle mold. We have this silicone mold. I don’t know how non-toxic it is, but I learned long ago that sometimes joy is the healthiest thing for us. And popsicles sure bring us joy:) Pop them in the freezer and let them harden overnight. Remove and enjoy!
