Apricot Coconut Slice
It’s never a bad time to have snacks in the fridge, but something about getting back into the autumn swing of things gives me a nudge of enthusiasm to whip up a few homemade snacks to have on hand for our outings. These apricot coconut bars have been a family favorite since our oldest was a baby. The mineral rich apricots, protein rich collagen, and healthy fats in the coconut combine to make such a nourishing and delicious little treat.
Ingredients:
2 cups dried apricots
3 cups shredded coconut
1/2 cup collagen powder
1/2 teaspoon salt
1 teaspoon vanilla
lemon zest from one lemon
1/4 cup of water to add a splash at a time
Directions:
In a food processor or high speed blender, process the shredded coconut on high speed. It will start to turn into a a paste after a bit. Add the apricots and process together until it forms a uniform mixture with the coconut. Add the collagen, salt, vanilla, and lemon zest and process until a ball forms. If a ball never forms, add water one little splash at a time and let it process further until it comes together! Scoop out the mixture and press evenly (with wet hands so they don’t stick!) into a parchment lined 8x8 pan. Pop them in the fridge to harden for an hour or so. Cut and Enjoy! They start to soften after a little bit at room temperature so they are best kept cool until eating. If you are packing a cold lunch bag, this is a perfect little treat!
