BELT Breakfast Wrap
It’s not surprising that the flavors of BLT occupy my summer meal planning thoughts. I like a classic BLT sandwich as much as the next girl, but the nutritionist side of my brain always registers that it’s not quite enough protein in a meal to keep a me going. I like adding some chicken or turkey to my sandwiches to remedy this, but my favorite way to round out the flavors of a BLT is to add eggs! This wrap is a bit untraditional since the tomatoes are cooked into a sweet jammy consistency to spread on the tortilla before adding the crisp bacon, softly scrambled eggs, and a showering of arugula for a bit of bite. I usually spread a bit of butter on my tortilla first for maximum yumminess, but you can lean into the BLT inspiration and use mayo!
Ingredients:
1 large wrap per person (I love homemade sourdough tortillas, but Siete makes a wonderful burrito wrap)
Tomato Jam:
1 tablespoon butter
1/2 cup cherry tomatoes (or whatever type you have on hand), cut into small bits
italian seasoning
1/4 teaspoon salt
2 eggs, softly scrambled in butter with salt and pepper
2 slices crispy bacon
a handful of arugula
Directions:
To begin with, you are going to want to have some bacon cooked. I haven’t cooked bacon on the stovetop in years since I discovered oven cooked bacon. I line a small baking sheet with parchment (making sure it goes up the sides otherwise the bacon fat gets under the parchment and I will have to clean the baking sheet...the horror!) Then I lay out as many slices of bacon as I can fit. Preheat the oven to 375 and pop the tray in while it heats up. It usually takes about 20 minutes but keep your nose open to catch it before it burns! While the bacon cooks, heat up a small saute pan. Add the butter and the diced tomatoes and let them cook on medium low, stirring every so often as they release their juices. Add the italian seasoning and salt and set aside when they are nice and concentrated. Make your scrambled eggs and heat the tortilla. To assemble, lay out the tortilla, spread the tomato jam in the center, add the eggs on top with the bacon crumbled into pieces and a bit of arugula. Wrap it up and devour!
