Lemony Cacio e Pepe
When was the last time you ate a pile of angel hair pasta? I’m a greedy eater by nature and the seemingly ginormous size of a single serving of angel hair thrills me. It’s the same as a serving of penne, but that always seems a pittance compared to the thread like strands of angel hair piled high! It’s the simple pleasures in life that bring me joy. Tossing the quick cooking strands of pasta with a bit of leftover pasta water, a pile of parmesan, lemon zest, salt, and pepper is my idea of heaven. They don’t call it angel hair for nothing.
Ingredients:
4 servings angel hair pasta, cooked according to package directions
1/4 cup reserved pasta water
1/2 cup freshly grated parmesan
zest from 2 lemons
2 tablespoons butter
salt and fresh pepper to taste
Directions:
Before you drain the pasta, save a bit of the pasta water. Drain the pasta and add it back into the cooking pot with the pasta water, the parmesan, lemon zest, and butter. Give it a good toss and stir with forks or tongs. Add some salt and more pepper than you think is wise and give it another toss. Taste a bit and add more salt or pepper to your liking. Serve it piled high and enjoy your moment of greediness!
