Citrus Kissed Cornbread
My family adores cornbread in every iteration. I’m sure you’ve noticed the growing collection of Simple Season’s cornbread varieties. I don’t know why I’ve never thought to throw a handful of citrus zest in, but thankfully it finally dawned on me and I won’t be stopping anytime soon. This is the perfect use for the zest of any limes (or lemons if you’d rather!) that you’ll be using the juice from. This recipe comes together in less than 10 minutes and bakes in about 20. There’s no excuse not to have it on the side of dinner to make the family happy!
Ingredients:
Makes 8 servings
¼ cup butter, melted
½ cup greek yogurt
¼ cup honey
2 tablespoons milk
1 egg
zest of 1 lime
½ cup medium coarse cornmeal
½ cup flour
1 teaspoon baking powder
¼ teaspoon baking soda
1 teaspoon salt
Directions:
Preheat your oven to 350 degrees F. Grab an 8x8 baking dish and put the ¼ cup of butter in it. Pop it in the oven while it preheats, this will butter your pan for you and melt the butter without making an extra dish to wash! In a large bowl, whisk together the melted butter from your baking pan, greek yogurt, honey, milk, egg, and lime zest. Add the cornmeal, flour, baking powder, baking soda, and salt. Fold together until just mixed and pour the batter back into your buttered pan (that you melted the butter in!). Bake for about 25-30 minutes, until the edges are golden and the middle springs back when pressed with a finger. Enjoy!
