Spiced Honey Cake
There are two children’s winter books we read that immediately make we want to bake a cake and have a cozy winter tea party. The first is Bear’s Winter Party and the second is Wintercake. I often lean towards citrusy cakes in the wintertime to brighten our day up a bit, and this one’s a cozy winter party cake that is sweet and heavily spiced with those warming smells and spices of winter. This particular cake is fragrant with the deep, floral sweetness of honey and the warmth of cinnamon. It’s simple, but perfectly so. Just like these winter days that linger on so sweetly if we could just appreciate them for what they are. Here’s to cozying up while the weather bids us to before the voice of spring calls us outside!
½ cup butter, melted
1 egg
⅓ cup of sugar
½ cup greek yogurt
½ cup honey
1 teaspoon vanilla
1 ½ cups flour
¼ teaspoon baking soda
1 teaspoon baking powder
a pinch of salt
1 heaping tablespoon of cinnamon
zest of 2 oranges
Directions:
Preheat the oven to 350 degrees F. Butter a 9x13 pan and set aside. In a large bowl, mix the melted butter, honey, sugar, yogurt, egg, and vanilla. Add the flour, baking soda, baking powder, salt, orange zest, and cinnamon and fold it all together Pour the batter into the buttered pan and pop in the oven for about 30 minutes. It will scent your house in the most wonderful way as it cooks! The cake will be quite golden from the honey, but it will spring back when a finger presses on top when it’s done. Let the cake cool for about 20-25 minutes before cutting. You can serve it with generously heaped piles of vanilla whipped cream for a lovely winter treat!
