Flaky Yogurt Biscuits

What better recipes are there than the tried and true favorites that show up in my kitchen week after week after week? The recipes that I can make with my eyes closed and have been so finely tuned that there isn’t an extra dish used, an unnecessary ingredient, or inefficient step...those are the ones I truly love sharing and are the heart of simplicity. So there you have it, a weekly recipe that gets made in our kitchen so much that the recipe is more of a tradition than a necessity. I hope they become as well loved in your home as they are in ours.


2 1/2 cups flour

1 teaspoon salt

1 tablespoon baking powder

1/2 cup cold butter, grated on a box grater or diced into small cubes

1 1/3 cups greek yogurt


Directions:

Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper and set aside. In a large bowl, combine the flour, salt, and baking powder. Add the grated or cubed cold butter and rub it in the flour with your hands until it feels like a rough sand with pea sized bits of butter. Add the yogurt and stir with a wooden spoon or fork until the dough is just combined, not any longer. Using your hands knead and form the dough into a ball inside of the bowl and scoop it out onto a lightly floured surface. It’ll seem a little dry and crumbly, that will change! Knead it together a few times and press into a square about 1 inch thick. Cut the dough in half and put one side on top of the other in a stack. Press into a square again and repeat the cut and stack maneuver. Repeat once more and then pat into a square a bit less than an inch thick and cut into 12 small squares. Take the baking sheet out of the oven and place the biscuits on it with at least 1/2 inch between each other. They will expand slightly as they cook. Bake for about 15 minutes, you may need to add a few minutes until they are nice and golden. Take them out of the oven and enjoy!
