Lemon Chive Aioli

You can never go wrong with a shmear of mayo on a sandwich. I love how the French do it and call it something much fancier. Of course, a true aioli isn’t the exact same as mayonnaise, but it’s pretty darn close. The difference is that freshness that comes through. They make their sauces from scratch and would be outrageously offended (and are, I’m sure!) at the presence of the ubiquitous jar of mayo in every American fridge. We still keep our fridge stocked with the classic stuff, but I like to give it a bit of tartness with a dollop of greek yogurt and liven it up with mix ins when we use it! This lemon chive “aioli” is SO good on turkey burgers, turkey sandwiches piled high with fresh spring greens, and even drizzled over fish with potatoes on the side.


¼ cup mayonnaise (our fav)

¼ cup greek yogurt

a handful of chives, finely diced

the juice of 1 lemon

a splash of white wine vinegar

salt to taste


Directions:

Grab a jar you don’t mind storing in the fridge for a few days. Add all of the ingredients and give it a vigorous shake. Use it on everything for the new 3 or 4 days!
