Sticky Ginger Chicken Meatballs with Stir Fry Veg
Something about the colder weather has me craving a sticky, Asian inspired bowl of rice with stir fried veggies and tender meatballs coated in a sweet and savory sauce. The subtle spice of the ginger warms me to my bones and it feels truly satisfying. The kind of meal that you want on a snow day (and usually order out for!). I love meals that cook the meat in sauce, but are easily separated for developing palates and picky eaters. I scoop the meatballs out of the sauce when serving so my children get the hint of taste, but not the puddle of sauce that the grown ups find so delicious. I know one day they’ll ask for a ladle full of sauce but for now they like just a hint! I hope this meal warms you up just as the cold weather hits.
Ingredients:
Makes 8 servings
Meatballs:
2 pounds ground turkey or chicken
½ cup breadcrumbs
(I love using stale sourdough bread, ground in the blender)
2 eggs, whisked well
2 teaspoons salt
1 teaspoon garlic powder
Sticky Ginger Sauce:
2 teaspoons ground ginger
2 teaspoons toasted sesame oil
1 cup coconut aminos (or soy sauce)
¼ cup apple cider vinegar
½ cup brown sugar
¼ cup bone broth
Stir Fried Veg:
small scoop of coconut oil
1 bag of coleslaw mix
a splash of coconut aminos
Directions:
Preheat your oven to 400 degrees F and line a large baking sheet with parchment. We’ll make the meatballs first. In a large bowl, whisk the eggs very well. Add the breadcrumbs, salt, and garlic powder and stir well. Add the ground meat and gently use a wooden spoon or fork to combine the meat until the breadcrumb mixture is mixed evenly. Use a spoon to scoop tablespoon size balls and gently roll them into round shapes. You don’t want to compress the meat too much or you’ll have tough meatballs! Pop the meatballs in the oven and set your timer for 25 minutes.
Meanwhile, get the sauce simmering. Simply combine all of the sauce ingredients in a large saucepan (big enough to fit all of the meatballs in after they are done cooking). Bring it to a simmer and let it genly boil while the meatballs cook. It will thicken as it cooks, so make sure to give it a good stir every few minutes.
At this point, you can cook your stir fry. Heat a skillet over medium high heat and add the coconut oil. Add the bag of coleslaw mix and let it get slightly brown on the bottom before stirring it around. Let it cook on the other side. It should be softening and browning at this point. Add a splash of coconut aminos and you’re done! When the meatballs are cooked through, toss them into the sauce and stir until they’re coated with the delicious sauce!
