Chimichurri

An herby green sauce is a year round staple in our kitchen. Parsley is incredibly high in vitamins which makes this sauce not only delicious, but chock full of nutrition. The vibrant flavors are at home with braised meats like an energetic side kick that livens things up a bit. Make extra and drizzle it on eggs, mix with mayo for a sandwich spread, or drizzle on tacos later in the week. You won’t regret it.


Ingredients:

1/3 cup olive oil

2 tablespoons red wine vinegar

1 garlic clove, finely grated or minced

1/2 teaspoon salt

1 teaspoon fresh oregano, finely chopped (or 1/2 teaspoon dried oregano)

a pinch of red pepper flakes

1 bunch of parsley, finely chopped (one big handful)


Directions:

Mix all of the ingredients together in a bowl and let sit for a few minutes to bring all of the flavors together. It will store in an airtight container for a week at least!
