Blueberry Syrup

My grandpa was famous for his huge breakfast spread anytime we had family gatherings. He usually pulled one special grandchild aside to ask what they wanted and treated them like the guest of honor. My favorite was always French toast with peanut butter and homemade blueberry syrup. As a grownup I had to find a way to make it with my kind of ingredients. This recipe couldn’t be easier or more delicious!


Ingredients:

1 cup frozen wild blueberries

1/4 cup maple syrup

2 tablespoons butter

pinch of salt


Directions:

In a large saucepan, over low heat, melt the butter. Add the blueberries, maple syrup, and tiny pinch of salt. Let it simmer for about 10 minutes while you cook the Johnny cakes. Pour generously over the stack and enjoy!
