Sunshine Green Sauce

We all could use a little sunshine this time of year. We may not be getting it outside, but we can whip some bright zingy green sauce up to add a bit of sunshine to our meals no matter the weather. Cilantro is surprisingly a colder weather crop, of course it won’t grow where there are feet of snow on the ground but it can’t take high temperatures as well as other herbs. I love how nutrient dense herbs can be, packed with micronutrients and antioxidants. They also have compounds that aid the body in detoxification, which is helpful this time of year as we are a bit more stagnant from lack of movement and heat. Green sauces like this can be drizzled over eggs, braised meats, pan fried fish, and whatever else you fancy.


Ingredients:

1 bunch of cilantro, about 1 cup (if you’re not a fan you can use arugula or parsley!)

1 small bunch of chives (or a small garlic clove)

juice of one lime

1/4 cup olive oil

1/2 avocado (you could also use 1/4 cup yogurt!)

1/2 teaspoon salt

a bit of pepper


Directions:

Add all of the ingredients to a high power blender and blitz until just combined. Its ok to have some chunks! If it’s too thick you can add a splash of water to get the blender moving. You can store the leftover in an airtight container in the fridge for a few days. Drizzle it with abandon on everything you eat!
