Stir Fry Any Veg

This is far from an authentic stir fry, but it makes a good side dish for a meat and rice meal. I love how it bulks the meal up a bit and the subtle sweetness of the veggies contrasts so well with the buttery rice and savory meat. It’s ok if the kids turn their noses up at it, let them try a bit or two and don't push it! One day they will crave crispy stir fried snow peas with their homemade orange chicken and rice.


Ingredients:

1 tablespoon coconut oil

2-3 cups veggies (we love frozen broccoli, bags of broccoli slaw, sliced cabbage, and/or snow peas)

1 teaspoon wine vinegar

salt and pepper


Directions:

Grab a large sauce pan and set it to medium heat. You’ll want to get it nice and hot before adding the coconut oil. Check the heat by flicking a bit of water on the pan. It should dance in little beads on the surface rather than sizzle up right away. At that point, add your coconut oil. Let it melt and immediately add your veggies. Try to spread them out so they aren’t on top of each other. Sprinkle the salt and pepper over top. Let them sit for a minute of so and develop a bit of burnish. Keeping it at the high heat stir every few minutes until the veggies are cooked through. Drizzle with the vinegar and taste for seasoning. Add a bit more salt if it’s needed and plate up while it’s hot!
