Cherry Vanilla Gummies
We love having gelatin gummies on hand at all times in our home. We usually switch the flavors according to the season and these deep and tart flavored gummies are a winter favorite. The gelatin is incredibly nourishing and is an easy way to get anti-inflammatory amino acids into your diet. We love broth in our home, but using powdered gelatin allows us to get even more of the good stuff. The bonus of this recipe is the tart cherry juice which is chock full of antioxidants and can help children (and adults!) ease into sleep more easily due to it’s effect on melatonin production. Also, they just taste really good.
Ingredients:
4 cups tart cherry juice (you can cut the juice in half and replace the rest with water if you want a more subtle flavor)
1 teaspoon vanilla extract
1/4-1/3 cup raw honey, depending on how sweet you like them
½ cup grassfed gelatin

1/4 cup heavy cream or coconut milk (optional, but oh, so good)
Directions:
In a wide shallow pan, mix the cherry juice with the vanilla. Gently sprinkle the gelatin over top trying to make an even coating so it can soak up without clumping.
Let it sit in the cold pan until the gelatin blooms (which means it has absorbed liquid and no longer looks like a powder).
While it blooms, take an 8x8 glass baking dish and coat it with coconut oil.
Once the gelatin is bloomed, turn the heat on low under the pan and let the mixture warm. It will start to turn to a liquid. Bring it to a simmer and whisk gently until no clumps of gelatin remain. Take it off the heat and add the honey. Stir it gently to combine. Pour into the dish and pour the cream over top in a drizzling motion. Use a butter knife to marble the cream through. Move the dish carefully to the fridge. Let it set for a few hours and cut into squares. Enjoy!
