Oatmeal Chocolate Chip Cookies
If I’m honest, a warm oatmeal cookie with a cold glass of milk is my ideal bedtime snack. I go to bed with a hint of sweetness and a dose of nutrients from the milk. It’s the perfect recipe for a night of sweet dreams.
Ingredients:
1 cup coconut sugar
½ cup butter, melted and cooled slightly
1 egg
½ teaspoon salt
1 teaspoon vanilla
½ teaspoon baking soda
1 teaspoon baking powder
¾ cup flour (we use jovial organics einkorn)
1 ½ cup oats (we use these)
1 cup chocolate chips
Flaky sea salt to top
Directions:
In a large bowl, mix the butter and sugar until combined. Add the egg, vanilla, and salt and stir until shiny and smooth. Add the flour and oats and sprinkle the baking powder and baking soda over top. Stir until just combined and then fold in the chocolate chips. Make sure the batter isn’t warm from the butter otherwise your chocolate chips will start to melt!
Put the bowl in the fridge for about an hour to bring the dough together otherwise the cookies will turn into very flat, crispy cookies not fluffy chewy ones!
Preheat the over to 350 and use a generous scoop per cookie. Roll into a ball and place on a parchment lined baking sheet. Sprinkle flaky sea salt on top and bake for about 14-15 minutes or until the edges are golden brown. Let the cookies cool slightly on the tray before moving them or they will fall apart! It’s worth the wait ;)
