Brown Sugar & Nutmeg Glazed Cake Donuts

Homemade donuts don’t need much of an introduction, but I will say that baked donuts have become one of my favorite ways to create a bit of whimsy and magic in our mornings at home. They take minutes to mix up and the delight and joy they bring my children is unparalleled. I believe mothers have a special gift of creating warm, cozy environments for our family's to thrive in and a simple shift in the normal breakfast routine is such a wonderful way to do it! Light a candle, eat donuts and scrambled eggs watching the snow fall outside and remember that memories are created in moments like these!


Ingredients:

1 ¼ cups flour

½ teaspoon baking soda

¼ teaspoon baking powder

1 teaspoon cinnamon

¼ teaspoon grated nutmeg

½ cup yogurt

¼ cup milk

1 teaspoon vanilla

1 egg

½ cup brown sugar

2 tablespoons butter, melted

Cinnamon Glaze:

½ cup powdered sugar

1 tablespoon butter

splash of vanilla extract

½ teaspoon cinnamon

splash of milk


Directions:

Preheat your oven to 425 degrees F. In a large bowl, whisk the egg, sugar, vanilla, yogurt, milk, and melted butter together. Add the flour, baking soda, baking powder, cinnamon, and nutmeg and fold until just combined. If you want to make donut holes, you can use a mini muffin pan, just be sure to butter the pan before hand so they slide right out. You can fill the cups about three quarters of the way full. Bake for about 12 minutes. If you are making regular donuts in a silicone baking pan the easiest way to fill the pan in to create a piping bag. I like to place a ziploc bag in a mug with the point going down and the top of the bag folded over the edge of the mug. Then I scoop the batter into the bag trying to get it down towards the point. Lift the bag up and snip the tip of the corner off so you can squeeze the batter through the hole. To fill the pan, gently squeeze the batter through while you create the circle donut shape. You only need to fill the holes halfway up otherwise your donuts will overflow the pan! Bake these for about 18 minutes! While they are baking, put the glaze ingredients in a shallow skillet over low heat, using a whisk to combine. Keep it warm. You can add more milk to make it a bit thinner if needed. When the donuts are done, let them cool for a few minutes then pop them out of the pan. Gently dip the top of the donut into the glaze and place on a plate. Repeat until all the donuts are glazed!
