Parmesan Roasted Sprouts

A roasted veggie on the side pulls so much weight with very little effort. In less than 5 minutes of chopping you can pop it in the oven to let the heat do the rest of the work. A little toss with olive oil and salt and a showering of parmesan before roasting takes it to the next level of deliciousness without adding any more work!


Ingredients:

Makes 4 servings

3 cups brussels sprouts, sliced thinly (you can use broccoli instead!)

2 tablespoons olive oil

salt and pepper to taste

4 tablespoons freshly grated parmesan


Directions:

Preheat the oven to 425 degrees F. Line a large baking sheet with parchment paper. Toss the sprouts with the olive oil on the tray. Sprinkle with salt and pepper and spread in an even layer. Grate the parmesan over top. Pop in the oven to roast for about 25 minutes. Give them a quick stir and cook for another 10 minutes or so.
