Creamsicle Gummies

Gelatin gummies are a staple in our home with good reason. The glycine in gelatin is so healing for the gut lining, but also balances out more inflammatory amino acids found in muscle meats cooked without the gelatinous parts (like steak and chicken breasts). The protein in the gelatin balances out the mineral rich fruit juice and creates a perfect little bite to grab when you feel your blood sugar dipping. We love these as a part of a snack lunch, but also as a quick sunrise snack before the main event of family breakfast. I love this variation with vitamin C packed OJ and fat soluble vitamins from the farm fresh cream. It’s truly delicious and nutritious.


Ingredients:

3 cups orange juice

1/2 cup gelatin

1/2 teaspoon vanilla

1/3 cup honey

1/2 cup heavy cream


Directions:

In a wide bottomed pot, pour the 4 cups of orange juice and sprinkle the gelatin evenly over top. Let it sit until the gelatin completely absorbs into the juice. While that happens, rub coconut oil onto an 8x8 glass baking dish and set aside. Once the gelatin has bloomed (or absorbed) heat the mixture over low heat. You’ll see it start to liquify. Let it come to a simmer and whisk gently. Turn the heat off and pour the honey and vanilla in. Whisk gently again. Pour the mixture into the baking dish. Drizzle the cream over top in thin ribbons and use a knife to create a marble effect. Carefully transfer it to the fridge to set. You’ll need to give it a few hours at least to set completely. Once it’s set, slice it into squares or small cubes and enjoy! It will keep for at least a week in your fridge.
