Cottage Cheese Pancakes
These sound incredibly unappealing, but please believe me when I say that these are the pancakes that we make more often than not. The texture is almost soufflé like with a melt in your mouth finish. My favorite part is how absolutely packed with protein they are. We pile our plates high and scarf them down with the assurance that we are still getting our protein needs met first thing in the morning! I do hope you whip them up this month and discover that they’ve been missing from your life.
Ingredients:
4 eggs
1 1/2 cups cottage cheese
(i use and love good culture 2% cottage cheese!)
1 cup flour (i use jovial einkorn flour)
1 tablespoon baking powder
1/4 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
Directions:
Heat a large skillet or griddle over medium heat. Meanwhile, in a large bowl whisk the eggs, cottage cheese, and sugar together very well. Add the vanilla and cinnamon and stir to combine. Then add the flour and baking powder and whisk together well. Once the skillet it hot, add a bit of butter, ghee, or coconut oil on the griddle. Place a tablespoon of batter on the griddle and fit as many as you can leaving about 2 inches between. These don’t bubble as much as a normal pancake, so you’ll need to let them cook until an edge of the pancake lifted up revealed a golden bottom. If you try to flip them to soon, they will fall apart! When they are ready, flip them and cook for another minute or so on the other side. Serve them hot and with lots of butter and maple syrup! Enjoy!
