Crispy Broiled Fish

I’ve often said that I don't write many seafood recipes because they seem too simple. Then I was reminded by many of you sweet people that simple is what you are here for! In that spirit, I’ll share my simplest seafood recipes with you all ;) This one is perfect for spring because you still get a warm crispy protein, but the white fish is so delicate that it feels fresh! If you don’t like mayo, don’t despair, you can’t taste it but it keeps the fish so moist and add a lot to the end product!


Ingredients:

4 haddock or similar white fish filets (we love frozen wild haddock because it’s tender and has a mild flavor, bonus points for affordability and sustainable fishing practices)

1 teaspoon salt and fresh ground pepper to taste

1 tablespoon good quality mayonnaise (look for one made with avocado oil, olive oil or MCT oil)

1 tablespoon dijon mustard

1/4 cup bread crumbs

(we make our own using stale sourdough bread and a blender, but you can use whatever you have on hand!)

1 very thinly sliced lemon


Directions:

Preheat the oven to 425 and line a baking sheet with parchment. Place your filets on the parchment and dab with a paper towel to get rid of any excess moisture and sprinkle with salt and pepper. Flip the fish over and slide the thinly sliced lemon under the fish. Dab the new side of fish and season with salt and pepper also. In a small bowl, mix the mayonnaise and mustard together. Spread this mixture evenly over the top of each filet. Sprinkle the breadcrumbs over top. Place in the oven for about 10 minutes and then switch to low broil. Move the fish to the top rack and broil until the top is browned and crispy. Serve quickly before it cools too much.
