BBQ Chicken Smashburger with Buttermilk Slaw
This is a mouthful, I know. I always struggle naming my recipes because I want you to know what you’re in for! These are just a really delicious barbeque flavored chicken meatball, smashed out in a pan with coconut oil and cooked until crispy edged and tender. Pile it on a bun with a tangy slaw and an extra drizzle of BBQ sauce and you’re in heaven.
Ingredients:
Makes 8 servings
Smashburgers:
2 pounds ground chicken or turkey
1 teaspoon salt
1 teaspoon garlic powder
1 egg
2 tablespoons milk
⅔ cup breadcrumbs (I use stale sourdough that I blend until fine and store in the freezer ;)
2 tablespoons BBQ sauce
(I love Date Lady, but you could also do 1 tablespoon ketchup and one tablespoon honey)
2 tablespoons finely chopped chives or green onions
coconut oil for cooking
Slaw:
half a head of green cabbage, finely chopped
¼ cup whole milk or butter milk
¼ cup greek yogurt
1 tablespoon sugar
1 teaspoon apple cider vinegar
salt to taste
Directions:
In a large bowl, whisk the egg and add the breadcrumbs, milk, salt, garlic powder, barbecue sauce and chopped chives. Mix together well. Add the ground meat and use your hands to knead it all together until all the breadcrumb mixture is even throughout. Set aside and heat a wide skillet over medium heat. Melt enough coconut oil to coat the pan and scoop about ¼ cup of the meat mixture and roll into a ball. Put it in the pan and let it cook for about 1 minute before pressing it flat into a smashed burger shape. Let it cook for about 3 more minutes, until golden brown on the underside. Flip and cook for about 3 minutes on the other side until golden brown. You can cook about 3 burgers in the pan at the same time. Repeat until all the burgers are cooked.
While those are cooking, mix the slaw ingredients together in a bowl and toss to combine. Set aside.
When all the burgers are done cooking, grab a bun if you want and pile it high with a burger patty, slaw, and an extra drizzle of BBQ sauce. I also love these served over a bed of slaw without the bun with a drizzle of BBQ sauce and a side of sweet potato fries.
