Cinnamon Sugar Peach Cobbler
I can’t let a summer go by without making a juicy peach cobbler topped with melty vanilla ice cream. If I only get about 80 summers in my life, you’d better believe I’m living them up! This cobbler is as simple as it comes...I even cheat a bit and use frozen peaches so I can save all the fresh and ripe peach goodness for eating out of hand! It needs a bit of time in the oven to get all bubbly and crisp, but the actual hands on time is honest to goodness, less than 10 minutes. I promise, I timed it. The cinnamon sugar sprinkled over top gives it a cozy snickerdoodle effect that I’d like to repeat with every dessert ever after. Ingredients:
Filling:
2 x 10 ounce bags of frozen peaches (or 6 fresh peaches)
1/3 cup brown sugar
3 tablespoons of arrowroot powder
2 teaspoons vanilla extract
½ teaspoon cinnamon
Cobbler topping:
1 cup flour
1/3 cup brown sugar
½ Tablespoon baking powder
½ teaspoon salt
½ cup of butter, melted
½ cup plain greek yogurt
Cinnamon sugar topping:
¼ teaspoon salt
1 tablespoon sugar
½ teaspoon cinnamon
Directions:
Preheat the oven to 375 degrees F. In an 8x8 ovenproof dish toss the peaches with the brown sugar, arrowroot powder, vanilla extract, and cinnamon. Set it aside. In a large bowl, mix the flour, brown sugar, baking powder, salt, melted butter, and Greek yogurt. Whisk it until smooth. Spread the batter over top of the peach mixture until it covers most of the fruit. Pop it in the oven for about 35 minutes. Check it towards the end, you want the topping golden but not burnt! When you think there is about 5 minutes left, sprinkle the cinnamon sugar topping mixture over top of the cobbler and cook for another 5 minutes. Take it out of the oven and eat with a big old scoop of vanilla ice cream! Enjoy this precious summer!
