Crunchy Salmon

Salmon is one seafood item that always goes over well in our family. I try to get seafood in at least once a week to vary our proteins and get the mineral rich superfood in our diet. This means we eat a good amount of wild caught salmon. I’m not complaining, it’s affordable and convenient and it cooks in less than 20 minutes! I do have to find ways to spice it up though, otherwise it can get a bit repetitious for my tastes. One way to jazz it up is to smear some pesto on and top with breadcrumbs...and voila! It’s exciting and delicious and lauded with applause by the whole family. Maybe there’s no applause, but there are clean plates and grunts of approval all around. I’ll take that as a win!


Ingredients:

Makes 4 servings

Crunchy Salmon:

4 salmon filets

4 teaspoons pesto

½ cup breadcrumbs

butter or olive oil


Directions:

Preheat your oven to 450 F and line a baking sheet with parchment paper. Lay the filets on the baking sheet skin side down. Spread the pesto on the filets in a thin layer. Sprinkle the breadcrumbs over the pesto in a thin layer and press lightly to adhere. Drizzle with olive oil or place a pat of butter over the breadcrumbs to help it crisp up. Set the timer for 15 minutes. Now get your dishes washed up while they cook ;) When the timer goes off, turn the broiler on for 2-3 minutes to broil the salmon. You want the breadcrumbs nice and crispy but not burnt so keep a close eye on it! You can serve the salmon with the skin removed, it should easily separate from the flesh after cooking. Enjoy!
