Homemade Garden Pico

This is a non-recipe recipe to make when your counters (or garden) are overflowing with cherry tomatoes. I don’t know about you, but we often have bowls upon bowls of them tucked away waiting to be used by mid-summer! I always hope to have leftovers as they store so well, but alas, we are pico and tortilla chip gluttons in this house and leave no bowl unfinished.


Ingredients:

Makes 8 servings

1 pint cherry tomatoes, quartered

½ red onion, diced

juice from 1 lime

1 tablespoon chopped cilantro

salt to taste


Directions:

Simply combine all the pico ingredients in a bowl and stir. Give it a taste for seasoning and adjust until it tastes just right for you. Enjoy!
