Salted Maple Pecan Fudge

Fudge isn’t what one would immediately think of when nourishing food comes up. It’s usually a heap of butter with a shocking amount of sugar. Ok for a treat now and then, but not something you’d keep around the house. I flipped the script on this one and wanted to create a treat we could whip up quickly without breaking the sugar bank. We keep these on hand and nibble on them after lunch while we read a chapter of our read aloud. Nourishing fudge...where have you been all my life?!


Ingredients:

1 cup of coconut oil

3/4 cup cocoa powder (this fermented cacao powder is our favorite!)

1/2 cup collagen (you can use code JMW10 for a discount on our favorite collagen!)

3/4 cup maple syrup

1/2 cup pecans, roughly chopped (these sprouted pecans are our favorite)

1/2 teaspoon vanilla extract

a sprinkle of flaky sea salt


Directions:

Line an 8x8 pan with parchment paper for easy removal. To get it to fit more easily into the corners, crumple it up into a ball and then smooth it out again. It will fit more snugly in the pan this way!

Slowly melt the coconut oil on low heat.

When it’s melted, add the cocoa powder, collagen, maple syrup, vanilla extract, and most of the chopped pecans. Give it a vigorous whisk and combine it the best you can until it forms a smooth mixture.

Pour into the lined pan. Sprinkle the remaining pecans and a bit of flaky sea salt on top. Place it in the fridge to harden for about an hour and slice it with a sharp knife. You’ll need to store in the fridge because it will begin to soften at warm room temperature.
