Eggnog Ice Cream

Ice cream seems to be an unseasonable treat for the cold weather season, but I love it year round. Normally, I gravitate towards warming foods when the weather is chilly to bring a feeling of vitality and well being. There’s a grounding quality to warm food that we need this time of year to help us feel calm and safe when the world is frozen. Which brings me back to ice cream, a literal frozen bowl of a treat. My trick for warming up cold foods to enjoy them year round is to add warming spices to them. Eggnog is a classic example of a cold treat made grounding with the warming qualities of cinnamon and nutmeg. I’ve crossed this idea over into ice cream, which is really just frozen egg nog complete with cream and sugared egg yolks. Now you can enjoy your warming cold treat ;)


Ingredients:

1 cup heavy cream

2 cups whole milk

2 egg yolks

2 scoops collagen

teensy pinch of salt

3/4 cup sugar

1/4 teaspoon vanilla powder

(can sub for 1 teaspoon vanilla extract, but I highly recommend investing in vanilla powder!

1/2 teaspoon freshly grated nutmeg

1/2 teaspoon ground cinnamon


Directions:

In a high speed blender, mix all of the ingredients until light and frothy. Pour into the bowl of an ice cream maker and churn until soft serve consistency. You should definitely eat a bowl right away and pour the rest into a glass tupperware container (we use these) and store in the freezer. It will still be scoopable and soft straight from the freezer!
